At Au Soleil d'Austerlitz , every wine has a story. Our wine list was conceived as a meeting point between French terroir, the sincerity of independent winemakers, and Parisian conviviality . Among our partner producers, two names perfectly embody this philosophy: Vincent Doucet in Sancerre and Pascal Laurens in Marcillac.



🍷 Vincent Doucet – The precision white Sancerre

In the heart of Sancerre , on the slopes of the Loire, Vincent Doucet cultivates his vines with exacting standards and respect for life.

Their Sancerre Blanc , captivating with its aromatic purity , elegant minerality , and notes of citrus and white flowers , is served chilled at Au Soleil d'Austerlitz . It pairs wonderfully with our fish dishes, goat cheese platters, or lightly creamed poultry.

🍇 Pascal Laurens – The Aveyron character of Marcillac

Head to the Rougier de Marcillac , nestled between the valleys and plateaus of the Aveyron region. Pascal Laurens , a winemaker established on these typical red soils, produces authentic wines, full of character and identity. His Marcillac red , made from the Fer Servadou (or Mansois) grape variety , reveals aromas of fresh red fruit, spices, and a beautiful tannic structure . The Marcillac white , a rarer wine, offers a touch of freshness and surprising minerality.
