🌿 A family of restaurateurs since 1891

The history of our brasserie is rooted in that of the Salabert family , Parisian restaurateurs for over a century. It all began in 1891 , when the first generation opened a café in Paris. Since then, each era has seen the birth of a new establishment, animated by the same spirit: a taste for a job well done , a sincere welcome, and the conviviality typical of Parisian brasseries .



👩 The first woman to take over

Today, I have the honor and pride of taking over — as the fifth generation and first woman to continue this family adventure. With Groupe La Relève , I am committed to perpetuating this heritage while bringing a more modern and responsible touch: seasonal , simple and authentic cuisine, responsible sourcing , and a constant concern for fair pricing .



🌾 Between Paris and Aubrac

Our roots run deep in the Aubrac region , our family's cradle and a source of daily inspiration. It is there that we source the majority of our products, from producers and artisans with whom we share common values: respect for the land, authenticity, and common sense. Every dish that comes out of our kitchen tells a little bit of this story: that of transmission, of a link between town and country, between tradition and renewal.

At Au Soleil d'Austerlitz , it's more than just a café-brasserie: it's a place to live where travellers , locals , students and curious passersby meet . People come to enjoy a homemade meal, exchange ideas, rediscover the taste of simple things and share an authentic moment — just like those who work there and those who meet there.
