Following in the footsteps of the Salabert family, restaurateurs since 1896, we have chosen to work with trusted suppliers from Aveyron , rooted in a tradition of respectful and sustainable farming: Languedoc Lozère Viande and Maison Conquet .


🇫🇷 The taste of authenticity, from field to plate

Our meats come from family farms located on the Aubrac and South Aveyron plateaus, where the animals graze outdoors, fed on grass and hay produced on site. These natural conditions, combined with know-how passed down from generation to generation, guarantee tender, tasty and authentic meat , renowned for its finesse and incomparable taste.

Languedoc Lozère Viande works hand in hand with local farmers. Their commitment: complete traceability, from producer to plate, and rigorous selection of carcasses to offer restaurateurs consistent quality. It is thanks to them that we can serve daily cuts of beef, veal, or lamb from the Aubrac and Grands Causses regions , recognized as some of the best in France.
